Back to school season is upon us and that means it’s time to start thinking about homework assignments and pre-planned meals. Though we’re no experts in algebra, we can offer some insight into the latter – specifically delicious and nutritious school lunches.
While you could always toss a PB&J in a brown paper bag and call it a day, there are lots of healthy and surprisingly easy alternatives out there that will keep your kids happy and well nourished. There’s no denying that what your kids consume at lunchtime has a big impact on their concentration and energy levels for the rest of the day. So, it only makes sense to send them off with lunch boxes full of foods that provide energy and nutrition.
Simple and Healthy Recipes Your Kids are Sure to Love
1. Turkey Pinwheels:
Spread a thin layer of low-fat mayonnaise on a whole-wheat wrap. Sprinkle baby spinach leaves and shredded carrots over-top. Arrange slices of turkey and thinly sliced cheese over-top of the vegetables. Roll into a wrap and cut into pinwheels!
2. Veggie Sticks with Hummus & Rice Crackers:
Hummus is packed with protein and makes a great dip for crackers and veggies alike. Create a delicious bento box with rice crackers, a side of hummus, and a blend of colorful veggies. We like carrots, cucumbers, and celery. For the more adventurous kiddies – add in cherry tomatoes, snap peas and bell peppers!
3. Whole Wheat Pita Pocket with Grilled Chicken & Hummus:
Spread a layer of hummus in a whole-wheat pita. Add sliced grilled chicken and shredded veggies – the more the merrier! TIP: Make extra of your favorite “leftover-friendly” dinner items to save time (& money) on lunches. Grilled chicken, for example, goes great in sandwiches and wraps and will keep in the fridge for several days.
For dessert, a few great options include dried fruits, bran-based muffins, and all-natural fruit leathers.
